Peeling Potatoes

The days of using a potato peeler for me is officially over. I saw this trick on Rachal Ray’s show and it works wonderfully.
Tools Needed:
Sharp knife
Pot of water with lid
Tongs
Step One: Fill pot with hot tap water (enough to cover all your potatoes). Place over high flame (heat) and cover with lid. Heat to boiling.

4 tart green apples, cored and chopped
1/4 cup blanched slivered almonds, toasted
1/4 cup dried cranberries
1/4 cup chopped dried cherries
1 (8 ounce) container vanilla yogurt

2 tablespoons finely chopped onion
1/2 teaspoon salt
