Awesome Apple Pie

I don’t know about you, but I LOVE apple pie!  As a matter of fact, I made one the other day!  Here’s the recipe I used:
For the crust:

2 1/4 cups all-purpose flour
3/4 teaspoon salt
2/3 cup shortening
8-10 tablespoons ice cold water

1 recipe pastry for a 9 inch double crust pie
1 egg white, whisked
1/2 cup unsalted butter
3 tablespoons all-purpose flour
1/4 cup water
1/2 cup white sugar
