Easy Three-C Bake is a simple 5 step recipe with Chicken, Cheese, and Celery soup. This was one of those spur of the moment recipes that I made one night when company was coming to dinner with just a few hours notice. We got dinner cooked and the house clean in no time at all.

Ingredients:

4 cups cooked white rice (still hot)

3 Chicken breasts (boneless)

2 cans Cream of Celery Soup

8 oz. milk

2 1/2 cups shredded medium Cheddar cheese

Lemon and Basil seasoning (Pampered Chef)

salt and pepper to taste

olive oil

Instructions:

Cubed chicken and sautee in a skillet with olive oil season with seasoning, salt and pepper.

Mix cooked rice with 2 cups shredded cheese.

Mix soup with milk with whisk til blended well.

Mix all ingredients together and pour evenly into a microwavable casserole dish.

Cover top with remaining 1/2 cup shredded cheese and microwave til hot. (about 2-3 minutes)

We had cornbread mini-muffins with this meal, along with some other side dishes that our friends brought over. We always enjoy having fellowship at our home. Sharing a meal each week with other families has brought us closer to the Lord with each other and we are thankful for the communion we have with one another and our Lord at our dining room table.

Tips:

For added flavor you can boil your rice in chicken broth instead of water.

For added color you can sprinkle in some dry parsley.

Add a tablespoon of butter to the cooked rice to avoid sticky rice.

Possible substitutions:

Sharp cheddar cheese

Swiss cheese

Turkey breast

Cream of chicken soup

Additions:

Peas

Corn

Cashews

This recipe is a variation of the Fantasy Fudge on the label of Kraft Jet Puffed Marshmallow Cream.
3 c. sugar
3/4 c. unsalted butter
2/3 c. evaporated milk (not fat free)
1 (12 oz.) pkg. (2 c.) Nestle Toll House White Chocolate Morsels
1 (7 oz.) jar marshmallow cream
1 c. chopped macadamia nuts
1 tsp. pure vanilla extract

Combine sugar, butter and evaporated milk in heavy 2 1/2 to 3-quart saucepan; bring to full rolling boil, stirring constantly. Continue boiling 5 minutes over medium heat or until candy thermometer reaches 234 degrees, stirring constantly to prevent scorching.

Remove from heat; stir in Nestle Toll House white chocolate morsels until melted. Add marshmallow cream, macadamia nuts and vanilla extract; beat until well blended. Pour into greased 13×9 inch baking pan. Cool at room temperature; cut into squares. Makes 3 pounds. Store in an air tight container in the refrigerator.

Tips:

Line pan with foil, spray with cooking spray. After cooling simply flip over, peel back foil, and cut into squares.

Spray Pam cooking pray on your spoon before mixing final ingredients together. Will help when it comes time to clean that spoon.

Possible substitutions:

Nestle Butterscotch chips (no nuts)

5 oz. Semi-sweet chocolate chips and 7 oz. Reese’s peanut butter chips (no nuts)

The days of using a potato peeler for me is officially over. I saw this trick on Rachal Ray’s show and it works wonderfully.

Tools Needed:

Sharp knife

Pot of water with lid

Tongs

Step One: Fill pot with hot tap water (enough to cover all your potatoes). Place over high flame (heat) and cover with lid. Heat to boiling.

Step Two: Score all your potatoes. When I do this I score them, with the sharp knife, in one continuous score from top to bottom and side to side.

Step Three: Once the potatoes are scored and the water is boiling, GENTLY place the potatoes in the water with tongs and cover with lid. Heat to boiling again and time for 5-10 minutes.

Step Four: Gently pour out all hot water and fill pan with cold tap water.

Step Five: Remove one potato at a time and hold under running cold water and simply remove peel with your hands. It slips right off!

TIP: Toss peels in garbage, sometimes the peels can do damage to your garbage disposal.
