Easy Three-C Bake

Easy Three-C Bake is a simple 5 step recipe with Chicken, Cheese, and Celery soup. This was one of those spur of the moment recipes that I made one night when company was coming to dinner with just a few hours notice. We got dinner cooked and the house clean in no time at all.

Ingredients:

4 cups cooked white rice (still hot)

3 Chicken breasts (boneless)

2 cans Cream of Celery Soup

8 oz. milk

2 1/2 cups shredded medium Cheddar cheese

Lemon and Basil seasoning (Pampered Chef)

salt and pepper to taste

olive oil

Instructions:

  • Cubed chicken and sautee in a skillet with olive oil season with seasoning, salt and pepper.
  • Mix cooked rice with 2 cups shredded cheese.
  • Mix soup with milk with whisk til blended well.
  • Mix all ingredients together and pour evenly into a microwavable casserole dish.
  • Cover top with remaining 1/2 cup shredded cheese and microwave til hot. (about 2-3 minutes)

We had cornbread mini-muffins with this meal, along with some other side dishes that our friends brought over. We always enjoy having fellowship at our home. Sharing a meal each week with other families has brought us closer to the Lord with each other and we are thankful for the communion we have with one another and our Lord at our dining room table.

Tips:

For added flavor you can boil your rice in chicken broth instead of water.

For added color you can sprinkle in some dry parsley.

Add a tablespoon of butter to the cooked rice to avoid sticky rice.

Possible substitutions:

Sharp cheddar cheese

Swiss cheese

Turkey breast

Cream of chicken soup

Additions:

Peas

Corn

Cashews
