Cinnamon Pecan Muffins

3 cups flour

3/4 cup sugar, plus 2 T.

4 teaspoons Baking Powder

1 1/4 teaspoon cinnamon

3/4 cup chopped pecans

2 large eggs

1 cup milk

2/3 cup vegtable oil

Preheat oven to 400 degrees. Mix dry ingredients together in a large bowl. Stir in pecans. Mix wet ingredients together in a small bowl. Make a well in the center of the dry ingredients, and pour in wet ingredients. Mix just until moist. Fill greased muffin cups 1/2 full. Sprinkle with extra sugar. Bake for 20 minutes. Enjoy! Makes about 22 muffins.muffins2

    wow! They do look good! Our family has a Honey/Pecan Cookie that we *love*, so I know this would be a big hit :)
