Bacon Ranch Pasta Salad

INGREDIENTSranchbacon_1

* 1 (16 ounce) package uncooked bow tie pasta
* 1 pound bacon
* 1 ¼ cup Ranch Dressing
* 2 cloves garlic, minced
* 1 large tomato, chopped
* ¾ cup onion, diced
* 1 (4.25 ounce) can sliced black olives
* ½ cup shredded Cheddar cheese
* ¼ cup parmesan cheese
* ¼ – 1/3 cup Fresh Cilantro, chopped

DIRECTIONS

1. Bring a large pot of lightly salted water to a boil. Stir in bow tie pasta and cook as directed on package; drain and let cool a bit.
2. Place bacon in a skillet over medium-high heat and cook until evenly brown. Drain and chop.
3. In a large bowl, mix onion, tomato, olives, cheddar and parmesan cheese and garlic. Add pasta, bacon, cilantro and ranch and gently stir. If your noodles or bacon are still hot, then you will melt your cheese, so make sure they are cooled sufficiently. Cover and chill at least 1 hour in the refrigerator. Toss with a couple tablespoons of milk or more ranch dressing if the salad seems a little dry.
