This recipe is one of my favourites. My brother, Eric, found the recipe in a catalogue. The recipe is so easy to make. It kind of reminds me of the verse in
Exodus 16
"18And the house of Israel called the name thereof Manna: and it was like coriander seed, white; and the taste of it was like wafers made with honey."
Since the cookies are small, there are tons of them! Just follow the instructions below. Now enjoy some homemade vanilla wafers!
Homemade Vanilla Wafers
Ingredients:
1 cup butter
1 1/2 cups sugar
3 eggs
1 tbsp. milk
2 tsps. vanilla
3 cups flour (make sure you don't use wheat flour, they will taste like it.)
3 tsp. baking powder
Directions:
Cream butter and sugar until light and fluffy. Blend in eggs and beat well. Stir in flour and baking powder. The dough will be stiff. Add milk and vanilla. The dough will be a little less stiff. Cover and let the dough chill for 1-2 hours. I think we let it chill for about an hour, maybe an hour and a half. After it is chilled, it will be very stiff. Let the dough get to room temperature before rolling, it will be easier that way.
Roll the dough to a very thin layer, about 1/4 inch. Something you might want to do is flour your rolling pin before and while rolling the dough. The dough will be sticking to it. You also want to make sure there is enough flour on the table so that it won't stick to the table. We had some problems getting the left-over dough off the table to roll it out again. So make sure you have plenty of flour.
Cut small round cookies with a cookie cutter. If you don't have a small cookie cutter, use the smallest cup you can find. Or even a measuring cup would be ok. You want the cookies to be about 1-1 1/2 inches. Place them on an ungreased cookie sheet, as seen here: ***(cookie 2 photo)***
Bake at 400* for 6-8 minutes. ***(oven cookies 3 photo)*** Don't bake them too long or they will be too hard to bite. After you take them out of the oven, place them on a wire rack to cool, like here: ***(cooling cookies 4)*** I advise you to check on your cookies every three minutes to make sure they are not getting burnt. The last ones we put in the oven we forgot about, so they burnt. We used them as dog treats. :)

You can put them on a plate or place them in a tin with a lid for later. ***(in tin cookies 5)*** We had tons of cookies that wouldn't fit into the tin.
The cookies are good with apple dip or by themselves. I liked them by themselves best. I hope you enjoy the recipe.

Yummy. I never thought of manna that way! LOL!
Those look way better than the ones in a cardboard box. I love Vanila Wafers. Seems like I have less of a guilty conscience when I eat those over chocolate chip! Ha!
